Fresh Lemonade

When I was growing up we had quite a few fruit trees in our California backyard. During the long days of summer – it was always a special treat to discover activities and recipes we could make with the abundance of fruit. Lemonade was one of those activities. Enjoy.

Ingredients (6-8 servings)

  • 1 cup sugar (reduce to ¾ cup if you prefer less sweet)
  • 1 cup of water
  • 1 cup of lemon juice
  • 2 to 3 cups cold water

Preparation

First make a “simple syrup." Place the sugar and water in a small saucepan and bring to a simmer. Stir so that the sugar dissolves completely and remove from heat.

While the water is heating for the simple syrup, juice your lemons. Depending on the size of the lemon 4 – 6 of them should be enough for one cup of juice.

Pour the juice and the simple syrup sugar water into a serving pitcher. Add 2 to 3 cups of cold water and taste. Add more water if you would like it to be more diluted (also note that when you add ice – it will melt and naturally dilute is as well). If the lemonade is a little sweet for your taste – add a little more lemon juice to it. When you have finished – refrigerate.

    Fairy Jewel Learns to Make Pumpkin Pie

    Mary’s Pumpkin Pie

    (This Pumpkin Pie Recipe is from my Mother’s church cookbook. My mom had written in the margin “The best – creamy”)

    Makes 2 pies

    • 2 9” unbaked pie shells
    • Mix Together:
    • 1 ½ c. brown sugar
    • 2 T. flour
    • ½ tsp. salt
    • 1 tsp. cinnamon
    • ½ tsp. ginger
    • ¼ tsp. nutmeg

    Add:

    • 2 eggs
    • 1 pt. pumpkin (canned or freshly made)
    • 1 pt. milk

    Bake at 425 degrees, for 10 min.; then 325 for 40 minutes – or until set (test with a silver knife in the center until it comes out clean)

    Ms Molly’s famous Apple Crisp

    Not too sweet and I love it with goat milk yogurt!

    (This is a gluten free recipe – as I am gluten free)

    Pre-heat oven to 350 degrees

    • Wash, core, slice and cut into small bits - delicious baking apples
    • Fill a 9” glass baking dish ¾ full with the cut up apples
    • Pour some real maple syrup over the apples (about 1/3 cup)
    • Cut up 1 1/2 Tbs. of cold butter and sprinkle on top of apples

    In a bowl mix together the topping:

    • 2 cups gluten free old fashioned oats
    • 1 cup almond flour
    • 3 Tbs. Brown Sugar
    • 3 Tbs. of butter – melted (depending on how buttery you want it)
    • 1 tsp vanilla (pour it into the melted butter before mixing with dry mixture)

    Pour oat mixture on top of apples and press down with the back of a spoon

    Bake for 40 minutes or until the oak mixture is golden brown

    Serve warm with plain yogurt or vanilla ice cream

    Yum!

    Strawberry Pizza

    The children who attend Ms Molly's Lunch Bunch have made this easy recipe and we all loved it! We hope you enjoy it also.

    Ingredients:

    • One Bag Whole Wheat pre-made Pizza Dough from Trader Joes (in the refrigerated section)
    • Cinnamon
    • Sugar
    • Sliced Strawberries
    • Flour

    First, mix the cinnamon and sugar together as if you were mixing it for cinnamon toast. Then slice the strawberries, about 1/8th inch thick. Sprinkel a little cinnamon sugar and flour on the table. Grab a small handfull of pizza dough and place it on the cinnamon/sugar and flour. Have the children roll out the pizza dough with a rolling pin. Add cinnamon sugar and extra flour to keep it from sticking to the table. The children can turn the pizza dough several times while they are rolling it out. They are finished when the pizza dough is rolled out flat as a pancake.  Sprinkle the pizza with more cinnamon sugar and then place the straberries on top. Bake in a 375 degree oven for approximately 15-20 minutes.  Let the pizza cool and serve. Some children love to eat it with butter. Enjoy

    Ingredients

    • 2 cups corn masa mix (see Note)
    • 1 1/2 cups warm water

    Preparation

    1. Combine the masa mix and warm water in a medium bowl, mixing until a soft dough forms. You can use a wooden spoon for mixing, but you will have better results if you use your hands. Turn the dough out onto a floured surface and knead until it is smooth.

    If the dough seems dry, add more water, a tablespoon at a time, as necessary.

    2. To form the tortillas, one at a time, pinch off small handfuls (about 3 tablespoons) of the dough and roll each one between the palms of your hands into a ball. Cover the dough balls with a damp cloth as you form them, to keep them from drying out.

    3. Cut a quart-size resealable plastic bag open down both sides, to form a rectangle. Use the bag to line a tortilla press as you shape the tortillas, so they do not stick: Lay one side of the plastic over the bottom of the press, place a ball of dough in the center, and fold the other side of the plastic over the dough. Shut the top of the tortilla press firmly down on the dough to shape the tortilla. (See Note.)

    4. Heat a griddle until hot. Place a tortilla on the griddle and cook for 1 1/2 minutes. Using a spatula, flip it over and continue to cook, flipping it occasionally, until both sides are covered with small brown spots. Transfer to a plate and cover with a kitchen towel to keep warm while you cook the remaining tortillas, stacking the finished tortillas on the plate. Serve immediately.

    NoteIf you can't get your hands on a tortilla press, a clean countertop will do. You will still need the plastic so that the dough does not stick to the counter. Place a dough ball on one side of the plastic, cover with the other side, and use a heavy skillet to press out the tortilla. Masa mix can be found at Latin markets and some larger supermarkets.
